ÇÖKERTME (sliced steak served on a bed of finger fried potatoes) KEBAB WITH TURKISH STYLE SAUSAGE

Ingredients
Pınar Şölen Traditional Turkish Style Sausage
4 potatoes, medium size
Salt and ground black peppercorn
1 tbsp. tomato paste
1 tea cup hot water
2 tbsp. olive oil
Red pepper flakes
4-5 pieces of parsley (finely minced)

For the toppling;
2 glasses of yogurt
1 clove garlic
Salt
To fry;
Sunflower oil

Directions
Peel the potatoes and chop in matchstick shape. Heat the sunflower oil in a wide and deep pan. Fry the potatoes until they turn golden yellow. Put olive oil in a pan. Add the tomato paste and brown. Mix the sauce by adding 1 tea cup hot water. If desired, you may add the red pepper flakes at this stage. Beat the garlic or chop them in small sizes. Put the yogurt in a bowl and beat with garlic and salt. Place the fried potatoes into the service plate. Spread the yogurt over the top. Lay the sauced sausages on the top. Dress with parsley and serve.
