Crumbled feta salad with cumin and red pepper flakes – Cokelek Salatasi
This light and healthy salad is a delicious choice for lunch or a weekend brunch. Antakya has a special dried cheese blend with spices called kuru cokelek (also known as surk), that is traditionally used in this salad. Cumin, red pepper flakes and oregano is mixed in kuru cokelek and is readily available there. If kuru cokelek isn’t available, the Turkish white cheese or feta will work just as well. Cumin and red pepper flakes amazingly transform the delicate flavour of white cheese (or feta cheese) to a whole new level.
½ small red onion, finely diced
2 spring onions/scallions, finely chopped
2 medium tomatoes, finely diced
¼ of large cucumber, finely diced
Handful of flat leaf parsley, roughly chopped
110g/4oz Turkish white cheese or feta cheese, crumbled
5ml/1 teaspoon ground cumin
5ml/1 teaspoon red pepper (or paprika) flakes
5ml/1 teaspoon dried oregano
5ml/1 teaspoon ground sumac – optional
30ml/2 tablespoons extra virgin olive oil
15ml/1 tablespoon lemon juice
Salt and ground black pepper to taste
Turkish flat bread or pita bread wedges to serve
In a bowl, mix the Turkish white cheese or feta cheese, onion, spring onion/scallion, cumin, oregano and red pepper flakes with your hands. This will soften the onions and infuse the spices to the cheese and onions. Add the tomatoes, cucumber, parsley, olive oil and lemon juice, and mix well. Check the seasoning and add salt and ground black pepper to your taste and sprinkle some sumac over before you serve, if you like.
Serve with Turkish flat bread, pide ekmek or pita bread wedges.
