BEĞENDİ (sultan’s delight, lamb stew served on mashed eggplant) WITH PINAR TURKISH STYLE SAUSAGE

Ingredients
Pınar Şölen Traditional Turkish Style Sausage
1 kg eggplant
2 tbsp. olive oil
2 onions (diced)
2 cloves garlic (diced)
½ lemon juice
1 tbsp. flour
1 glass of milk
2 tomatoes (grated)
1 teaspoon nutmeg grate
2 tbsp. butter
Salt

Directions
Roast the eggplants on fire and peel. Keep the eggplants in lemon juice. Then, remove from the lemon juice and chop on a cutting board. Slightly brown 2 tbsp. butter and flour in a saucepan. Add the milk. Add the eggplants. Crush and bake at a low heat. Brown the onions and garlic with olive oil in a separate saucepan. Chop the Turkish Style Sausages, add them to the mixture and sauté. Add grated tomatoes. Bake for 4 to 5 minutes. Add salt and nutmeg grate to “beğendi”. Put “beğendi” onto the service plate and open the middle part with a spoon. Place the Turkish Style Sausages with tomato sauce. Dress with parsley leaves. Serve hot.
